COOKIE DOUGH ENERGY BITES
Prep time: 10 mins Chill time: 20 mins Serves: 15
INGREDIENTS
- 1 ¼ cup old fashioned oats
- ½ cup creamy peanut butter
- ⅓ cup maple syrup (or honey)
- 2 tbsp chia seeds
- 1 tsp vanilla extract
- 1 pinch sea salt
- 1/4 cup mini chocolate chips
- 2-3 tbsp sprinkles (optional)
INSTRUCTIONS
1. Add oats, peanut butter, maple syrup, chia seeds, vanilla extract, and salt into a
food processor
2. Pulse or process in intervals, scraping down the sides, until the ingredients are
mixed but still a bit chunky
3. Transfer the dough to a bowl, stir in chocolate chips and sprinkles
4. (Optional) If the dough is too wet (depending on the type of peanut butter used),
place bowl in the fridge for 20 minutes to make the dough firm and easier to
roll into balls
5. Scoop out the dough with a cookie scoop or spoon and roll into 1 inch balls with
your hands
6. Store in an air-tight container, in the fridge, for up to 1 week
