MMM Banana!

Give this week's recipe a try and I'm sure you are going to want to make more!

FROZEN YOGURT CUPS


Prep time: 5 mins Freeze time: 2 hours Makes: 12


INGREDIENTS


  • 1 large ripe banana

  • 1 cup yogurt (preferably full-fat yogurt)

  • 2 tbsp creamy peanut butter

  • 1 tsp honey

  • 2 tbsp chocolate chips

  • 2 tbsp crushed peanuts (or other nuts)


INSTRUCTIONS

  1. Line a muffin pan with silicone muffin cups or paper muffin cups

  2. Peel the banana, use a fork or potato masher to mash it in a bowl until it’s a smooth consistency. Save a few slices from the end of the banana to use as a topping

  3. Add the yogurt, peanut butter, and honey to the bowl, mix well

  4. Evenly fill the muffin cups with the yogurt mixture (about halfway)

  5. Gently press one banana slice into the middle of each yogurt cup, making sure it is not pushed too far in

  6. Sprinkle chocolate chips and crushed peanuts on top

  7. Place the muffin pan in the freezer for at least 2 hours or until firm
